Simple: Real Ale. Hand drawn through a beer engine, real ale is served at cellar temperature with a lower carbonation. This pays respect to Cellarmen of old, where the finishing touches for each beer were the responsibility of the Cellarman.
On the first Friday of every month, we will tap a firkin and serve it through a beer engine. These beers breath over a few days, oxidizing and changing, producing a time-dependent flavor profile. The mouthfeel is silky smooth, similar to a nitro beer.
